Ingredients[edit]

  • Japanese short grain rice, prepared as shari rice
  • toasted nori
  • 4 oz fresh Goat tenderloin (yagi), well chilled and placed on ice
  • wasabi paste
  • 1/4 cup rice wine vinegar
  • 1 tbsp sugar
  • 1 tsp salt

Shari rice[edit]

  • Wash rice thoroughly in cold water until the water runs clear.
  • Prepare rice in rice cooker.
  • While rice is cooking, mix the the vinegar, salt, and sugar together.
  • Dispense the rice into a large wooden bowl or wooden plate. Fold in the mixture with a wooden spatula until the rice is coated. Use a paper fan to sweep away excess steam and ensure even cooling of the rice.

Sushi[edit]

  • Slice yagi very thinly, to create slices approximately 2" x 1" x 1/8 ".
  • Using wet hands, form rice into oblong balls.
  • Apply small amount of wasabi to rice, place yagi slice on top, and wrap perpendicularly with a 1/2 strip of nori.

Serve with soy sauce and warm saki.
