Shouldn't the older male be "아저씨" and not "아주씨"? Or is that a transliteration/transcription thing?

아저씨 is right. :D

So it's pronounced "Ah-Juh-sshi"

The other is "Ah-Joo-sshi".

My Korean professors would so go mental on you for not using any standardized transliterations. :P

Ahahaha. Probably. Whenever I'm on Koreanwikiproject doing the transcription, some of them throw a tantrum. But they have to realize that sometimes the standardized transliterations are a bit off, so I write them how I see fit. Because I don't feel like writing: "Ah" "Ju" (Juh, like jug) "ssi" (sshi, like sea, except with 'sh") It's bothersome. I go by ear. And I feel that it helps foreigners pronounce it better. Instead of pronouncing it like "Ahjoosee"
