Yup, fine to use. Keeps for quite a while, it just loses it's freshness after a few months. If you're worried you can heat it in a dry pan to refresh it, but yours should be fine. CrundyTalk nerdy to me 18:12, 17 August 2010 (UTC)

Yeah, and I used chicken thighs. I'd had 6 pints of Stella before I started, then went back to the pub whilst it was simmering. Btw, the two things I've found that make a curry a bit bland are:
  1. Not enough salt. Curries need quite a lot of salt to bring the flavour of the spices out.
  2. Not enough garam masala. Taste the curry just before serving and if it's a bit bland then add a couple more teaspoons of garam masala to it and stir through. The mother in law always does with every curry she makes.

Yes mate, it was much better the second time round, because I cooked the chicken on the bone (as the recipe says!).

I used plenty of salt, as I remember you saying about that earlier (a 'fuck load of salt' I believe was your terminology), and if anything I used more garam masala than I meant to. I think I added too much water, and the chicken must have been pretty moist as it was swimming as it simmered. I tried to boil it off but without much avail. It was spicy, but not tomatoey or sharp enough. Too much hing maybe? Too much water definitely. Old dhana-jeeru? Chef not pissed enough? Never mind, life goes on. I wouldn't compare it to CP. Someone is wandalising all the articles on the site from A-Z, you block them. Same trap I fell into at uni. As boring as it sounds you need to have self control and only go to the pub (I mean at all, not even popping for "just one") once, maybe twice a week. Otherwise you'll quickly get behind on your coursework, become depressed, and leave uni with a drink problem which will take a lot more effort to erradicate. Sorry to be dull and not be all like "OMFG LOL!!!1! Just a brown box containing a jam pot of what looked like a biology experiment but on further examination proved to be what I had hoped all along. Huw and I were talking about how to eat it. He says with some fruit and cheese. It would also go well with Stilton or Gorgonzola on toasted sourdough. But I'm going to put a bit of it under the breast skin of a roasting chicken with butter and something savory like a sprig of rosemary and make a side of something with coriander, maybe aloo ghobi. An interesting read, and some points I haven't thought of before. The problem is that I hate these "Platform X vs Platform Y" comparisons, because they're never impartial. It's like when Microsoft did their Get the Facts campaign, which cherry-picked all the points that supported MS over Linux instead of reporting on all the facts. The point is, there is no such thing as an OS that is "more secure" than any other OS, because there are far too many angles to look at. For example, I would overall rate Linux as a more "secure" OS than Windows Server, but if a seasoned Windows admin who has never got a virus / hacked machine incident found this info and thought "ooh, OK I'll give it a go", chances are, they'd get their box taken over within months by an organised gang (yes, I know from personal experience, and it required a complete reinstall). Likewise for a vice versa situation. The most secure platform is one that has a knowledgable administrator looking after it. My argument is always against the "(Mac|Linux) is more secure than Windows because (there are no viruses for it|there are less security holes for it)" argument, which is bollocks. Wellington has had a few quakes in the last few days - making me nervous. Married life is treating me well and I have switched from an all beer diet to an all wine diet which means my beer belly (which didn't actually exist as anything more than a slight bulge which only I could see) has all but disappeared. You may very well be one of the only lucky individuals in the British Isles to have either of these things. The only question is how to get them into the country. One of them is contraband. The other is a delicious treat that of RationalWikians perhaps only Trent, Eira, and I know the magic of. Assuming you can get passable corn tortillas I hope you will make chicken enchiladas with green chile sauce and some borrachado beans. I will give you the recipes. The Crypto-Pro is in a 2 1/2 inch tall 1 7/8 inch diameter jar. I'm inclined to put it in a plastic baggy labeled "chile seasoning," scan and email the instructions, and let you sort it out on your end. It arrived today. I'll get it in the post tomorrow. Yeah well the fish medicine is a quinine compound and the last time I tried one of those it had me hallucinating so badly I didn't realize I wasn't in my hotel room quietly sleeping the stuff off but living on the street in Manaus Brazil until the Larium-induced psychotic episode broke. I guess I'm lucky it didn't happen while I was still in the jungle. But yeah, not good. And when I got home I had an allergic reaction that covered my body with tiny pimples that sort of looked like Rocky Mountain Spotted Fever, which I worried I'd gotten from all the ticks in the Amazon. So, no. I'm not going to mule that in my ass when I come over there this summer for my trans British Isles fly fishing trip. I also opted against putting what amounted to a few tablespoons of bright white powder in a ziplock bag and hoping for the best with customs. Instead I posted it a few days ago and described it as fish food on the customs form. Lemme know how that works out. Actually I had a bit of a nightmare day yesterday. A client I do a lot of work for (and who I convinced to move to Amazon EC2 to host his dedicated server) has been hit by this, so I've been sitting around for 2 days waiting for everything to come back online so I can spend hours setting up a new server for him while it's nice and sunny outside. Combined with the fact that I had to spend a few hours yesterday at the hospital because the mother-in-law was given the wrong prescription and ended up overdosing on a long acting type of insulin, and then to cheer me up the wife took me to get an ice cream down by the quay, whereupon a seagull shat on my head. Anyway, down to business: My missus had a chicken roshni (sp?) in a local Indian recently, I got the leftovers when I went to pick her and her mates up and it was absolutely delicious. It wasn't massively spicy, but was very tasty, with almost a sweet & sour flavour to it. I haven't been able to find a recipe anywhere for it, do you have one? Hmm, nowt. Can you describe it a bit more? If it had a sharp sourness then it may have been a Bengali style dish made with limes (well, indian limes look more like lemons) as the souring agent instead of tamarind and probably had a lot of garlic in it. As I said, I only got the leftovers, but from what I saw the gravy was quite bright red, not as bright red as a tikka masala, but brighter than a normal tomoato-based curry. It was quite thick, not as thick as a korma, but thicker than the curry I make from your recipe. I didn't spot any veg such as lentils in it, nor did it seem particularly oily. It really did have an taste in the background of Chinese sweet and sour sauce! Thanks for your help, I'll see if I kind find some more info... OK, so no cream, yoghurt, or coconut? If there was no yoghurt then it would suggest that lime was the souring agent. I can't find any recipes like you describe but I should be able to contruct something (ooh, new name! How about "Chicken Crundy"?). Nah, I didn't think there was any cream or yoghurt in it, I use yogurt in a lot of my curries and it didn't taste like that. No strong cardamom smell or taste either. (EC)OK, so no cardamom (unless you want to add it, just grind about 15-20 green cardamoms in a spice grinder, add a little water to make a paste, and fry for a couple of minutes after frying the spices).
Basically, you want to follow the standard curry recipe but with a few differences:
  1. Don't brown the onions. Cook them over a low heat until they are softened and just starting to tinge at the edges
  2. Double up the garlic, you want quite a lot (at least 10 cloves)
  3. When you add the spices, only fry them for a couple of minutes (this and #1 will stop the curry turning brown to give you a better colour)
  4. To get a bright red colour, you would normally want to use dried kashmiri chillis (quite hard to find, see this page) which you soften in warm water, mash up, and add after the spices. If you can't find them use a few drops of red food colouring
  5. When the curry is about 20 mins away from being cooked, add the juice of two limes and 2-3 heaped teaspoons of jaggery or soft brown sugar. When the curry is 5 mins from being ready, add a green pepper, an onion, and a couple of tomatoes (all cut into wedges, you want big chunks that still have a bit of bite in them).
I presume it was made with chicken breast, and if you want to do that then you'll need to crumble in a chicken stock cube after adding the tinned tomatoes. If you prefer to use fresh tomatoes instead of tinned, then skin about 3 tomatoes, chop, and add with a cup of water instead of the tin. CrundyTalk nerdy to me 10:32, 16 August 2011 (UTC)
Just had a look at that recipe. As you say I'm not sure where the sweet & sour comes from. I'm guessing the sour is from the tomatoes, but no mention of a sweetening agent. Also if the other pastes it mentions don't contain garlic then I'd add a lot more garlic than 4 cloves. Give it go and see how well it comes out. CrundyTalk nerdy to me 10:36, 16 August 2011 (UTC)

I have quite a stack of good veggie recipes, as I try to eat veggie-only food 3 or 4 times a week. The okra curry is nice, but you have to do it over a low heat to avoid burning anything. this is also a really nice veggie recipe, but you need to use very strong stilton (and for you, rennet-free) to make it well. Looks similar to this book my brother bought me a while back. Very good if you like restaurant curries, as curry places are now divided in two: the ones that use the above book method, and the ones that use huge jars of patak's curry pastes for everything (oh, and of course there are the proper curry houses, but you'd need to go to Bolton, Lecister, or Bradford to find one).
