Recipe:Ukrainian chicken noodle soup

This recipe was handed down to me by my mother. It's a generational recipe, coming from the Ukrainian/Latvian countryside some decades ago. It makes plenty of leftovers and keeps its flavor when microwaved.
Ingredients[edit]
- 2 chicken thighs
- 1 medium onion
- 2 medium carrots, sliced
- peppercorn and salt
- Vegeta all-purpose seasoning (This is crucial to get the taste right. You can buy Vegeta seasoning online or at your local international grocery store.)
- thin vermicelli noodles
Method[edit]
- Fill a medium pot with water and bring the chicken thighs to a boil. Drain the pot, rinse if necessary, and fill with fresh water.
- Peel the skin off the chicken and add it to the pot with sliced carrots, onion, and seasoning to taste. Cook on medium heat until broth is golden yellow, and the meat falls off the bone easily.
- Cook noodles in a separate pot using brand instructions. They should be soft and limp.
