Steven R. Gundry (born July 11, 1950) is a former cardiothoracic surgeon turned anti-lectin quack. Gundry popularized the lectin free quackery with his book, The Plant Paradox: The Hidden Dangers in "Healthy" Foods That Cause Disease and Weight Gain.

His top claim is that lectins, a type of protein found in various plant foods, are pro inflammatory.
